The Two Things Kitchens Get Written Up For

The first is indirect waste. The published county requirements put equipment such as steam tables, ice machines, prep sinks, warewashing sinks, display cases, and walk-ins on indirect waste piping, discharging through an air gap into a floor sink or another approved receptor. The air gap is the point: a physical break between the equipment drain and the drainage system, so nothing can be drawn back into food equipment if a line surcharges. A pipe run straight into a floor drain looks tidy and defeats the whole arrangement. It is one of the findings kitchens get written up for most often, and it is usually a legacy of equipment added by somebody who was not thinking about drainage.

The second is hot water, and it is an arithmetic problem rather than a plumbing failure. Capacity is about how quickly a heater produces hot water when everything runs at once, not how many gallons it holds. Add a dish machine to a kitchen that was already running a three-compartment sink and prep sinks, and the constraint shifts to recovery rate; a bigger tank buys you a longer first round and the same wall afterward. Fixtures a long way from the heater have their own version of the problem: hot water is available in theory, and cold water is available at the tap for the first minute. Both are answerable with numbers before anyone buys equipment, which is a considerably better time to find out.

Do you work outside service hours?
Yes, and for most kitchen work that is the sensible arrangement. After-hours rates are stated before anyone is dispatched, so the scheduling decision is yours with the numbers in front of you.
Is a grease trap the same as a grease interceptor?
Broadly, they do the same job at different scales. Smaller units sit inside and are rated by flow; larger ones sit outside and are rated in gallons. Which one your kitchen needs depends on fixture load, and the sewering agency sets the rules.
Who decides what size interceptor I need?
The agency that receives your discharge, not the health department. It sizes by fixture load using a published method, and when what you have no longer matches what you cook, you will hear it from us.
How often should the interceptor be serviced?
Southern California agencies generally expect service before accumulated grease and solids reach a set share of the device's capacity, with records kept. In practice, the cadence follows your volume, and a device that is overflowing is already past it.
Do you test backflow assemblies?
No. Testing and certification are handled by a certified tester, and we will point you to one. What we do is the plumbing around the assembly, and telling you when what is on your line is past helping.
My kitchen drains keep backing up. What is the actual fix?
For grease-laden lines, jetting on a cadence rather than cabling on an emergency, with a camera pass so you can see what the wall of the pipe looks like. Cabling a greased line opens a hole through the middle of the problem.
